The sous vide technology (from the French sous vide – under vacuum) involves long–term – for several hours - cooking pre-packaged food under vacuum in water at a low, precisely controlled temperature (usually no more than 70oC). The products do not lose their natural juices, as it happens with traditional cooking, and the absence of exposure to high temperatures, as during frying, ensures that they do not burn and do not dry out. This kind makes even tough meat tender, as the collagen of the connective tissue is converted into gelatin. Vegetables with this method of cooking do not boil, retain their natural appearance and fresh, crisp texture.
